Meatloaf Serves 8-10
1 T Oil
1 C Milk
1 C Onion (minced)
3 Eggs
¾ C Celery (minced)
1 T Worcestershire sauce
¾ C Bell Pepper (minced)
½ C Catsup
1 T Garlic (minced)
2 lbs Ground Beef
1/8 t Thyme
1 C Course Bread Crumbs
¼ t Oregano
2 t Seasoned Salt
1 T Salt
Preheat oven to 375 degrees.
Heat oil in a large skillet over medium heat. Sauté vegetables and seasonings until tender. Cool. Combine milk, eggs, Worcestershire sauce and catsup, and mix well. Place ground beef, vegetables and egg mixture in large bowl. Mix with hands, adding bread crumbs last. Shape into a loaf on a baking sheet. Make an indent in the top for glaze.
Bake for 50 minutes.
Tomato Glaze
1 t Oil
1 T Onion (minced)
1 t Garlic (minced)
¼ C Brown sugar
2 T Yellow Mustard
1 T Worcestershire Sauce
1 C Catsup
Heat oil over low heat. Cook onion and garlic 2 - 3 minutes. Add brown sugar and stir until disolved. Stir in remaining ingredients.
Remove loaf from oven and spoon glaze down center and spread over the sides. return to oven, lower heat to 300 degrees and bake for 30 minutes.
Allow to sit 15 minutes before serving.
